1. Salt and pepper the chicken breasts.
2. Mix flour, breadcrumbs and oil in a bowl.
3. Whisk the eggs in a second bowl.
4. Coat each chicken breast first in the beaten eggs, then in the flour, breadcrumb and oil mixture.
5. Heat the oil in a frying pan and fry the chicken breasts on both sides until golden brown.
6. Finally, brush the chicken breasts with full fat mustard and fry briefly.
7. Serve the finished chicken breasts with salad and mashed potatoes.
